One year Chronological Bible: Jeremiah 8:4-10:16, Jeremiah 26:1-24.  I was impressed with Jeremiah’s courage.  The officials wanted to put him to death and actually did put another prophet to death for telling them that they were cheating and worshipping idols, but one man supported Jeremiah and did not allow Jeremiah to be put to death

Breakfast: 2 eggs cooked in coconut oil with sun dried tomatoes and deli turkey

Lunch: large chicken Caesar salad without croutons

snack – smoke house almonds

Dinner: Coconut Walleye:   debone walleye (if it has been fileted well, you just need to go right along the middle of each half and I cut the row of bones out.  Then rinse boneless filets.  Make batter of 1 egg, 1/2 tsp baking powder, 2/3 c beer, 1-2 T coconut flour.  Stir and let sit a minute and the batter will thicken ( coconut flour “grows”).  Dredge each walleye filet in regular flour and shake off excess, then dip in batter, then in finely chopped organic coconut.  I do all filets and put on paper plates in refrigerator until I am ready to cook.  To cook, heat enough coconut oil to be about 1/4″ deep.  Put filets in and let them brown on one side, gently turn over and brown on other.

I also made spaghetti squash with butter and parmesan for a side dish.  Cut spaghetti squash in 1/2, scrape out seeds, put 1/4 in Ziploc microwavable bag w 2 T water, microwave 7 minutes.  Then do another section for 7 minutes – make as much as you need for family in same way.  After it is cooked and slightly cooled, take a fork to scrape it into a bowl and add butter.

I also made green salad with dinner.

Read through Bible in a year reading: Jeremiah 22:1-17, 2 Kings 23:31-37, all of Habakkuk.

Favorite verses from today: Habakkuk 3:17, 18. “Though the fig tree does not bud and there are no grapes on the vines, though the olive crop fails and the fields produce no food, though there are no sheep in the pen and no cattle in the stalls, yet I will rejoice in the Lord, I will be joyful in God my Savior”

Barbell – dead lifts – see instructions,  walked 30 minutes outside

Breakfast: 2 organic eggs cooked in coconut oil & frozen sausage patties.

Lunch: Left over mock potato salad and Mexican casserrole

Dinner: shish ka bobs – take 2-4 small fillet mignon and cut in 1″ cubes,  Marinate in 1/2 c low sodium soy sauce, 1/2 tsp garlic powder, 1 T agave, 1/4 c olive oil.  Put on skewers with “sweet golden snacking tomatoes, onion pieces and green and red bell peppers.

Zucchini Keftedes with Feta and Dill– grate up one med large zucchini (for 2-4 serv).  sprinkle with salt and let sit, then put in paper towels and squeeze moisture out.  Add 2 T grated onion, 1/2 pkg creamy dill dip (or 1 T fresh ch dill & ch mint & garlic). 1/2 c feta cheese, 1 egg and 3 oz cream cheese.   Heat coconut oil in pan, cook these like small pancakes.  Drain and you can make a topping of full fat yogurt with a little dill on top

Bible Reading (Chronological NIV Bible): Ps 81, Jeremiah 47:1-48:47, 2 Kings 23:29-30

Breakfast – low carb breakfast bowl from Hardees

Coffee & 2 T heavy cream & 1 T DaVinci sugar free vanilla syrup

Lunch – left over “mock potato salad”, dill pickles, and 1/2 Juicy Lucy Hamburger with mustard.

DinnerMexican Hamburger Casserole:  cook 1 # hamburger and 1 chopped bell pepper, mix with 4 eggs on the bottom of casserole pan.  On top, mix 2 c shredded cheese, 4 oz diced green chilies, sm can chopped black olives, drained, 1/3 c mayo.  Bake together.

Top with salsa & sour cream- serve over lettuce.

I am also cooking 1 artichoke to serve with butter.  I buy an artichoke and cut it in 1/2 and cook in pressure cooker with for about 20-25 min.  Serve with melted butter.

I am reading the One Year Chronological Bible and todays reading was all of Nahum, 2 Kings 23:1-28 and 2 Chronicles 35:1-19

Breakfast:   Cooked ham with coconut oil & 2 organic eggs
Coffee + 2 T heavy cream +1 T Da Vinci Vanilla Sugar Free syrup

Lunch: left over BBQ chicken & asparagus.

Snacks:  dill pickles, sunflower seeds.

DinnerJuicy Lucy Hambugers –  Make 2 very thin hamburger patties for each person on a 12″ square piece of aluminum foil. Put cooked bacon, cheese, thin slices of onion and bell pepper on one patty and place other patty top, press edges together, wrap in foil and cook on the grill about 20 minutes.  My husbands was served on a bun, but I had mine without a bun.

Mock potato Salad – take one fresh head of cauliflower, wash and break into florets.  Put 1/2 in a Ziploc “Zip n Steam” with 2 T water and cook 7 min.  Cook other half cauliflower the same way for another 7 minutes.  Cool and dice (these will be about the color, texture and size of the potatoes in potato salad).     Add 4 hard boiled eggs (chopped), 1 1/3 c mayo (regular or made with olive oil), 5 stalks of celery chopped, 1/4 c onion finely chopped, 2 T vinegar, 1 T yellow mustard, 1/2 package of Hidden Valley Dip mix.
